Rempeyek


Rempeyek or peyek is a deep-fried savoury Indonesian peanut cracker made from flour (usually rice flour), peanuts, dried anchovies or shrimp, coconut milk, salt and spices. Some people also add a chopped citrus leaf to add the "fresh" taste to it.
Rempeyek can also be made with spinach, which known as peyek bayam. To make this, the spinach leaf is dip to the batter and deep fried. A big Bayam leaf is required to make a nice peyek bayam.
They are popular in Indonesia, Malaysia, and The Netherlands, through its historical connection with Indonesia.
The crackers are shaped and cooked in a wok or pan of hot oil.
